Wildflower honey from our bees in Prince Edward County, Ontario. The colour and flavour is different every time we harvest depending on the flowers available and the weather. Honey is liquid when it's first harvested in summer and naturally begins to crystallize usually after a couple of months. This is what's known as creamed honey. Liquid honey that never crystallizes has been micro filtered and heated to destroy the naturally occurring crystals from pollen found in it. Our honey is unpasteurized and unfiltered so it will eventually become solid from crystallization.
